Pumpkin Mickey Waffles Recipe

In keeping with the pumpkin theme this season, I also made Mickey shaped pumpkin waffles to complete the perfect pumpkin breakfast alongside my Pumpkin Cream Cold Brew!

Ingredients

This recipe is a rendition of a paleo-friendly pumpkin waffle recipe. I used regular sugar, so the ingredient list as-is isn’t paleo, but it can be swapped with something like coconut sugar instead.

Waffle recipes are always pretty straightforward and simple. All we have to do is combine the ingredients into a batter and cook it with a waffle maker!

Mickey Waffles

For the Mickey shaped waffles I use the Select Brands Mickey Mouse Round Waffle Maker. It’s super easy to use and so cute!

 

Because this waffle batter rises quite a lot, it really fills in all the little Mickey Mouse head details, making these waffles extra cute!

The cooked waffles do come out quite delicate, so be careful removing them from the iron. I also cook these just a tad bit longer than a standard waffle recipe. Play around with the timing to find the right consistency for you!


I based my recipe off this paleo pumpkin waffle recipe, but made a few adjustments based on ingredients I had in my pantry!

Pumpkin Waffles

Ingredients

ºoº 3 eggs
ºoº 3/4 cup pumpkin puree
ºoº 1/4 cup soy milk
ºoº 3 tbsp oil (I used avocado oil)
ºoº 1/3 cup sugar
ºoº 1 3/4 cup blanched almond flour
ºoº 1/2 tsp baking soda
ºoº 1 1/2 tsp baking powder
ºoº 1/2 tsp salt
ºoº 1 tbsp pumpkin pie spice

Directions

  1. Mix together the eggs, pumpkin puree, pumpkin pie spice, sugar, and oil in a large mixing bowl. Set aside.

  2. Mix together the almond flour, baking soda, baking powder, and salt in another mixing bowl.

  3. Add the dry mixture into the wet ingredients in batches and whisk until just combined.

  4. Scoop your waffle batter onto your waffle maker and cook according to your waffle maker instructions. Continue until all the batter is used.

Notes

ºoº This waffle batter is quite thick! It won’t pour onto your waffle maker the way a thinner batter
would. I gently spread the batter around so that it would cover the whole waffle maker grill.
ºoº The batter also rises rather quickly when you cook it! So I used less batter for each waffle
expecting it to expand. Adjust you portioning as needed.
